ttle Johnny was in class and the teacher
announced that
they were going to try something different to help
everyone get to know
each other a little better, and to help with their
spelling.
She explained, “I want you to stand up and give us the
occupation of
your father, spell it, and say one thing he would give
us all if he was
here today.”
The first student raised her
hand to volunteer.
“Marcy,” the teacher said. “You may go
first.”
Marcy replied, “My father is a banker. B-A-N-K-E-R and if he
was here
today, he would give us all a shiny new penny.”
The teacher said, “Very nice, Marcy, who wants to go next?”
Kevin
stood up and announced, “My father is a baker. B-A-K-E-R and if
he
was here today, he would give us all a freshly-baked cookie.”
“Very good,” the teacher told Kevin.
Jeff was next, and he said,
“My father is an accountant. A-K, no wait,
A-C-K, no…”

Before he could attempt to spell it once more, the teacher cut
him off
and told him to sit back down and to think about it for a
while. When
he thought he knew how to spell it, he could stand back up
and try
again.
Little Johnny raised his hand in excitement
hoping to be acknowledged
by the teacher. The teacher called on
little Johnny to go next.

Put fajitas into marinade and let stand for about 3 hours. Remove meat from marinade and cook about 5 inches above hot coals and mesquite.Slice meat into bite-size strips. Put the meat into a bowl with about 2 cups lime juice. Heat a cast iron skillet until it is very hot. Empty the contents of the bowl, sliced meat and lime juice, into the hot skillet and remove it from the heat. Take it to the table in the skillet. Serve in hot flour tortillas. incurred during this time period if your home is so damaged that you can’t live at
your home. Provide any additional needed information to your insurance provider
assigned to handle your claim. Fianlly if you’re dissatisfied with any part of your

Pork-Tortilla Casserole (Chilaquiles de Puerco)8 (6-inch) corn tortillas, preferably day-old1 (2 pound) boneless pork shoulder, cut into 1 1/2-inch cubes2 medium white onions, thinly sliced lengthwise1 teaspoon saltWaterLard or vegetable oil2 fresh poblano chiles, roasted, peeled, seeded, de-veined and chopped1 clove garlic, minced1/2 teaspoon ground cumin1 (14 ounce) can tomatillos, undrained, coarsely chopped1 cup whipping cream1/4 cup coarsely chopped fresh cilantro1 cup shredded Chihuahua or Monterey Jack Cheese1 cup shredded mild Cheddar cheese5 or 6 tomato slices, cut into halves1/2 cup crema or sour creamFresh cilantro sprigsStack tortillas; cut in half, then cut crosswise into 1/2-inch wide strip. Spread loosely on wire rack; let stand 1 to 2 hours to dry slightly.Combine pork, 1 onion and salt in large saucepan; add water to cover pork. Heat over high heat to boiling; reduce heat to low. Simmer, covered, until pork is tender, 1 1/2 hours.Melt enough lard in deep, heavy, large skillet to 1/2-inch depth. Heat to 375 degrees F; adjust heat to maintain temperature. Stir in chopped cilantro.Preheat oven to 375 degrees F. Mix cheeses in small bowl. Drain pork; using 2 forks, pull into coarse shreds. Spread 1/2 of tortilla strips in greased, shallow 2 1/2-quart casserole. Add layers of 1/2 each pork, cream mixture and cheeses in that order. Repeat all layers. Roasted Pecan Butter Pecan Pie (Louisiana Cajun)Dough1 cup plus 3 tablespoons flour1/2 teaspoon salt7 tablespoons cold, unsalted butter, cut up1/4 cup ice waterSift 1 cup of the flour and the salt into a large bowl. Add butter, and working quickly with a light touch, cut butter into the flour with a spoon and fingertips until mixture is the texture of coarse cornmeal. Add ice water and stir until well blended. Form the dough into a ball and place on a flat surface floured with the remaining 3 tablespoons flour. With a floured rolling pin, roll out dough to a thickness of 1/4 to 1/8 inch. Place an ungreased 8 1/2-inch round pie pan face down on top of the dough and cut around the pan, leaving a 3/4-inch border. Lightly flour the top of the dough and fold it in quarters. Carefully place dough in the pie pan, with the points of the folded dough centered. Unfold dough and line the pan bottom and sides, gently pressing dough into place and draping a little over the rim. Flute the edges. Refrigerate prepared pie shell until ready to use.Pecan Filling1/2 cup pecan pieces or halves, dry roasted until dark3 large eggs1 cup granulated sugar1 cup dark corn syrup2 tablespoons unsalted butter, melted and cooled1 1/2 teaspoons vanilla extract1/8 teaspoon salt1 cup pecan halvesProcess roasted pecans in a food processor until they become a relatively smooth butter, 2 to 3 minutes, scraping sides down as needed with a rubber spatula. Place eggs in a medium-size bowl of an electric mixer and beat on high speed a few seconds until frothy. Add sugar, corn syrup, butter, vanilla extract, salt and pecan butter. Beat on medium speed a few seconds until well mixed, pushing sides down as needed. Stir in the unroasted pecan halves. Pour mixture into prepared pie shell. Place on a cookie sheet and bake at 350 degrees F for 40 minutes.Reduce heat to 325 degrees F and bake until filling is browned on top and crust on edges is lightly browned, about 40 minutes more. Remove from oven and let cool at least 30 minutes before serving.
